Malabi - Smooth and Fresh Dessert!

Malabi - so simple, so tasty! 😋
This is an Arab dessert consisting of milk and heavy cream made into a "pudding-like" consistency, with an kick of rosewater!

It has been one of my favorite desserts FOREVER, but always thought it'll be hard to make. But, with this quarantine, I decided to give it a shot, and discovered that it's not tough at all!
Also, a vegan version is equally easy to make - just switch for coconut milk and cream (YUM!)
*Recipe (serves 4)*
INGREDIENTS:
for pudding:
- 500 ml. Milk
- 50 gr. Cornstarch
- 25 ml. Rosewater
- 125 ml. Heavy Cream
- 50 gr. Sugar
for rosewater syrup:
- 125 ml. Water
- 200 gr. Sugar
- 1 tbsp. Rosewater
STEPS:
1. Combine 1/2 cup of milk, cornstarch, and rosewater in a bowl.
2. Bring the rest of the milk, heavy cream, and sugar to a simmer in a pot.
3. Add the cornstarch mixture to the pot and stir constantly over medium heat for about a minute, until the mixture thickens.
4. Serve in 4 small bowls and transfer to the fridge to cool down for at least 4 hours.
5. When serving, add rosewater syrup (recipe below), crushed caramelized peanuts, crushed cookies, and ground coconut.
5. In a small pan over low heat, bring all syrup ingredients to a simmer.
6. Wait for the mixture to cool and serve over the malabi pudding.
Add any toppings you like! I went for caramelized peanuts, dried shredded coconut and crushed maria biscuits.
